INGREDIENTS
- 1 C Salt
- 1 C Brown Sugar
- 2 T Peppercorns
- 2 T Coriander Seeds
- 2 Star Anise
- 1 Cinnamon Stick
- 1 Lemongrass Stalk, cut into 1/2" pieces
- 5 Kaffir Leaves
- 5 Garlic Cloves
- 1/2 G Hot Water
- 1/2 G Ice Cubes
INSTRUCTIONS
- Combine all the ingredients into large container
- Add hot water and stir until salt dissolves
- Add ice cubes to cool down hot water
- It should taste like sea water
- Place meat into the brine, and let it sit over night in the fridge
- Remove from brine, pat dry, and cook
