Yeak Brine

INGREDIENTS

  • 1 C Salt
  • 1 C Brown Sugar
  • 2 T Peppercorns
  • 2 T Coriander Seeds
  • 2 Star Anise
  • 1 Cinnamon Stick
  • 1 Lemongrass Stalk, cut into 1/2" pieces
  • 5 Kaffir Leaves
  • 5 Garlic Cloves
  • 1/2 G Hot Water
  • 1/2 G Ice Cubes

INSTRUCTIONS

  1. Combine all the ingredients into large container
  2. Add hot water and stir until salt dissolves
  3. Add ice cubes to cool down hot water
  4. It should taste like sea water
  5. Place meat into the brine, and let it sit over night in the fridge
  6. Remove from brine, pat dry, and cook
