INGREDIENTS
FRIED SMELT
1 Lb Smelt, cleaned and washed
1 C Corn starch
1 C Flour
Salt and Pepper to taste
GREEN MANGO + CHRUK
1 C Green Mango, shredded
1 T Chruk Pickled Habanero
1 T Fish Sauce
1 Garlic clove, rough chopped
INSTRUCTIONS
FRIED SMELT
In a medium pot, fill halfway with vegetable oil and bring to 350 F.
Combine Cornstarch and flour in a bowl.
Dredge Smelt in flour mixture and fry for 5 minutes or until golden brown and crispy.
Season with salt and pepper
Serve with Green Mango and Chruk
GREEN MANGO + CHRUK
In a bowl, combine green mango, chruk, fish sauce, and garlic.
Toss together until well incorporated and let it sit for 5 minutes for the flavors to develop.
